Arte & Sapori is a gastro-gourmet restaurant offering the best of Veneto cuisine: first courses, main courses, snacks and desserts made from the freshest ingredients, selected and transformed by the mastery of chef Claudio Merlo.

At Arte & Sapori, one can enjoy preserves, jams and fresh pasta that are the result of carefully guarded recipes handed down from generation to generation, as well as more elaborate and creative dishes to be displayed and shared at private parties and receptions.

In business for ten years, for the past two the restaurant has been operating in its new location with a beautiful open kitchen that allows customers to watch, step by step, the creation of the dishes they order.

FOR AN EVER-INCREASING RANGE OF OFFERINGS

Mr. Merlo approached Enofrigo motivated by a desire to expand its offerings: on the one hand, to accompany the gastronomic proposal with an adequate selection of wines to be sold in combination with the food; on the other hand, to give proper visibility to desserts, jams, preserves and fresh pasta, which, while not representing the restaurant’s core business, deserved a proper space. In this case, the Enofrigo product had to draw the customer’s attention and, of course, store the specialties at the best temperature.

i.Am, CONTEMPORARY AND ACCOMMODATING, HOSTS WINE AND SPECIAL FOODS.

We then presented the range of our displays, and the choice spontaneously fell on the i.Am line.

Arte & Sapori chose:

  • Two examples of the i.Am 2000 ventilated (single-temperature) model, 75cm deep.
    White wines and bubbles were arranged in one cellar, and reds in the other.
    The 75cm deep display case was chosen because it was very capacious (the room had a sufficiently deep niche in which to place it) and the ventilated model because of the need for a single display temperature.
  • A specimen of i.Am 2000 FIT, ventilated (single-temperature), with a depth of 55cm.
    This is where the preserves, jams, sweets and pasta were placed.
    In this case, the shallow depth display case was preferred because in the area where it would be placed, spaces were rather tight.
    The ventilated display case was chosen because of the need for uniform temperature.

THE RIGHT DEPTH IN ALL SITUATIONS

The solutions recommended by Enofrigo have double depth: thus, for the wine cabinets, where there was enough space, the display capacity was maximized, while, in the case of the canning display case, the FIT version allowed the arrangement in a highly visible location, despite the limited space.

The product lines mentioned and their finishes were chosen in consultation with Sara’s architects and corporate chef, with the ultimate goal of having equipment that would maximize the margin of the restaurant business.
