PROSIT, winebar and prosciutteria

Sorrento
Italy

Several rooms wind their way through a multi-level itinerary, a complex and captivating sensory journey through the flavors and aromas of Mediterranean and Italian food and wine in general.

This is Prosit, an eatery born in 2020 from the initiative of the Pollio cousins, heirs to a family that has been tickling the taste buds of the Sorrento Peninsula for practically four generations. Starting from the first room where you can shop or have quick meals, through the upper room, intended for informal meals, to the more intimate and cozy downstairs room, all rooms are designed with lively flair and contemporary sensibility, with materials such as Carrara marble, oxidized metals, and colored wood.

In these venues that bring together industrial suggestions, hints of seafaring tradition and seventeenth-century refinement, the public can taste wines of all kinds accompanied by typical dishes, cheeses and, above all, hams and sliced meats from everywhere, selected with experience from the proposals of small local producers who still guard the richest flavors and the most hidden scents.

EXPOSE WITHOUT DISTURBING

Which refrigerated wine cellar to choose to display selected wines without creating disconnects in the very special aesthetics of the venue?
This was the underlying question at the first meeting with Prosit.

INNOVATIVE WINE CELLARS WITH INDUSTRIAL AESTHETICS

From the first discussion with the architect, we noticed the important presence of materials such as wood and oxidized metals in the design and mood-board. The venue’s aesthetic would play on the ridge between modern energy and ancient elegance, tradition and experimentation. This immediately made us think of a next-generation product distinguished by striking design and high performance: the i.Am 2000 wine cellar.

We collaborated with Prosit’s carpenter to create the custom-built wooden rack that would surround the two i.Am wine cellars arranged on opposite sides of the most intimate room. Each showcase displays up to 260 bottles. With a light silver frame and black body, it would have blended seamlessly into the room, echoing the dark color of wine bottles and details such as oxidized sheet metal or exposed piping.

FOR EACH i.Am, FOUR DIFFERENT TEMPERATURES.

Given the variety of wines Prosit would offer, we suggested models with static refrigeration. This technology makes it possible to achieve four different temperatures in the same wine cellar, so that bottles with different characteristics can be readily displayed and served without space problems, protecting their aromas and characteristics.

The result definitely lived up to Prosit’s expectations: the wine cellars included in the room look like custom-designed products, in keeping with the overall aesthetic. They constitute a point of attraction for the public who are curious and willingly experiment with the venue’s wine offerings.
